Puffy Semolina Dumpling Soup (Supă de găluşte pufoase)

INGREDIENTS (semolina dumplings)


  1. In a large saucepan, bring the chicken broth to a boil, salt and pepper to taste, then lower the heat to keep it fairly boiling, but not boiling.
  2. Meanwhile, in a bowl, break the eggs into a bowl and add the salt. Whisk them until uniform.
  3. Sprinkle the semolina while whisking vigorously. Mix well each time.
  4. Leave the composition to stand for 15 minutes so that the semolina swells.
  5. Then use a small ice cream scoop to form a scoop of semolina at a time and add it to the broth.
  6. Dip the spoon in the broth before making each next dumpling. Repeat until the end.
  7. Cover the pot and simmer for 10 to 15 minutes or until the dumplings are puffed up.
  8. During cooking, pour 2 to 3 times a little cold water and stir gently. When the soup is ready, sprinkle with the parsley.
  9. Cover the pan again and cook for another 15 minutes. Serve hot.
In the absence of fresh parsley, dried parsley will do the trick.
Optionally, you can add 1 carrot, grated or slices when you start of cooking the broth, to add some extra flavor.
