For perfect grilled fish: Freshness above all! When buying, whether at the supermarket or at the fish market, always check the freshness of the desired variety of fish and choose another comparable variety, if necessary. Also remember that really fresh fish is not supposed to smell like fish and that fillets and steaks should not have dried or discolored portions. At home, we should immediately refrigerate our fish and ideally cook it the same day. Otherwise, we wrap it in a paper towel and put it in the coldest part of the fridge (change the paper towel after 24 hours). |
