Cauliflower Salad Spread (Salată de conopidă)

PREPARATION: 45 minutes
COOKING: 15 minutes
TOTAL: 30 minutes
PORTION(S): 8-10 servings



  1. Unwrap the cauliflower in very small bunches, put it in a cauldron of cold water and add the salt. Bring to a boil.
  2. Once cooked, drain the cauliflower in a colander for about 5 minutes.
  3. Mash the cauliflower finely and uniformly with a potato masher or in a food processor.
  4. Add the onion, garlic, lemon juice, salt and pepper.
  5. Spray the oil and mix well.
  6. Cool at room temperature for 30 minutes and in the refrigerator for another 30 minutes.
  7. Serve on fresh or toasted bread to taste.
Optionally, you can add well-boiled and mashed potato mayonnaise, mixed with 1 tsp of mustard, 30 ml of mineral water and 30 ml of oil.
