Leak And Potato Cream

PORTION(S): 4 servings



  1. In a saucepan, heat the oil over medium heat and fry the leeks and onion, stirring occasionally (about 10 minutes or until tender).
  2. Add the potatoes and broth, then bring to a boil.
  3. Reduce heat and simmer for 20 to 30 minutes or until potatoes are tender.
  4. Remove the pan from the heat and allow to cool.
  5. Pour the preparation into the jar of the blender or food processor, a small amount at a time, and mix until smooth.
  6. Transfer the preparation to a clean pan and bring to a boil.
  7. Reduce heat, incorporate cream, salt and black pepper to taste. Simmer for 15 minutes.
When serving, add chives (optional)
