Dried (Dehydrated) Vegetable Chicken Noodle Soup

PREPARATION: 30 minutes
COOKING: 1 hour
TOTAL: 1 hour 30 minutes



  1. In a large pot, bring the water to a boil.
  2. Add the vegetables and the Provence herbs. Simmer over medium heat for 30 mints, or until the vegetables are soft to taste.
  3. Meanwhile, preheat the oil in a pan and blanch the onions. Add the chicken pieces and grill lightly while stirring.
  4. Add this mixture to the soup and mix well. Simmer over medium heat for 15 minutes.
  5. Lower the heat to medium-low and add the filini and mix well. Simmer for 5 minutes.
  6. Pepper to taste and serve.
Filinis (small threads) are very thin and short pasta, resembling capelli d'angelo, but cut into pieces of about 1 in (2 cm).
Optionally, you can sour the soup the Romanian way by adding 4 tbsp (60 ml) of lemon juice or 1/2 cup (125 ml) of pickle marinade juice halfway through the cooking.
