Homemade No-Soaking Bean And Bacon Soup

PREPARATION: 30 minutes
COOKING: 2 hours 30 minutes (including 3 x 10 minutes for 3 boilings)
TOTAL: 3 hours
PORTION(S): 8-10 servings (of about 1 cup each)



  1. Sort the beans to remove those with imperfections. Wash them well in cold water and drain them.
  2. Bring beans to a boil in 2 l of cold water in a large pot or large, heavy Presto®-style pot, uncovered. Drain. Repeat this step 3 times. Each boil takes about 10 minutes.
  3. After the third time, rinse the beans in cold water and drain them.
  4. In the same pot or pot, return the beans, add the chicken broth and the other ingredients, except salt and pepper. Mix well.
  5. Bring to a boil, then cook over medium heat for 2 hours or until beans and vegetables are cooked to taste. Stir frequently.
  6. Add salt and pepper to taste.
  7. Serve very hot.
Remaining portions can be refrigerated for about 1 week.
