Butter And Herbs Rice

PORTION(S): 8 side dishes

INGREDIENTS

  1. 2 cups (500 ml) uncooked white rice
  2. 4 cups (1 L) chicken broth
  3. 2 tbsp (30 ml) butter
  4. 1 finely chopped onion
  5. 1 stalk of celery, finely chopped
  6. 1 small red pepper, finely chopped
  7. 1 tbsp (30 ml) Provence herbs
  8. salt and freshly ground pepper to taste

PREPARATION

  1. In a deep skillet or a heavy, uncovered Presto®-style pot, melt the butter over medium-high heat.
  2. Add vegetables and sauté them until tender (about 10 minutes).
  3. Add the chicken broth, rice and herbs. Add salt and pepper to taste. Mix well.
  4. Bring to a boil, then reduce heat and simmer. Cook until the rice has absorbed the liquid (about 30 minutes).
NOTES:
This rice can easily accompany any white meat (poultry, pork and fish).
