An easy and healthier alternative to commercial frozen roasted potatoes.
Potato Salad

- Preheat the oven to 400 °F (200 °C).
- Line a baking sheet with a sheet of parchment paper.
- Wash and rinse the potatoes well.
- Cut the potatoes into cubes of about 1/2 inch (1 cm).
- Place the potatoes in a large bowl and add the oil. Mix well.
- Sprinkle paprika, salt, pepper, parsley and chives while mixing.
- Transfer to the baking sheet.
- Bake for 20 minutes. Turn at half time.
- At the end, toss the potatoes a little and broil them for 2 to 4 minutes to make them crisp.
NOTES:
If you don't have fresh parsleyl and chives, you can use dried parsley and chives. The taste will be almost identical.
